King Arthur says at least 8. The middle of those ranges (6 to 7 inches) is our default for both NY-style and Neapolitan-style bakes.

Bake times by style:

  • NY-style on a 1/4" steel at 550°F with the broiler: 5 to 7 minutes total.
  • Neapolitan-style with broiler-dominant bake: 4 to 6 minutes total.

If toppings keep sliding off the peel, dust the peel with semolina flour, work fast, and don't let the dough sit on the peel more than 60 seconds before launch.

A quick safety note on parchment paper

Parchment paper is rated for 425 to 450°F. Reynolds, the brand most home cooks use, explicitly says do not use under the broiler. At broiler temperatures, parchment scorches, smokes, and can ignite.

If you need a launch aid, dust your peel with semolina or flour instead. The old trick of using a sheet of parchment under the dough, then sliding the parchment in with the pie, only works if you're nowhere near broil mode.

The home-oven move is to bump up: 65 to 70 percent hydration is the safe middle for home-oven Neapolitan. That extra water gives you margin on the longer bake.

  • Neapolitan: 58 to 65 percent (pros) / 65 to 70 percent (home oven)
  • NY-style: 62 to 67 percent
  • Detroit / Sicilian pan: 70 to 80 percent

Flour choice, bread flour vs 00 vs the pro flours

Flour protein content drives everything about how your dough behaves. Here's the US protein cheat sheet:

Caputo 00 is widely worshipped, but here's the contrarian take we've come around to. Caputo 00 was designed for very high heat and very fast bakes (around 2 minutes at 900°F). In a 550°F home oven, it can come out tender to the point of weak.

Bread flour, especially King Arthur Bread, often performs better at home oven temperatures because the higher protein gives you the structure you need for a longer bake. For NY-style, All Trumps will take you a huge leap forward. For first-time home pizza, KA Bread is the easy answer.

Sauce, less is more, and you don't need to cook it

A great pizza sauce is canned crushed tomatoes (San Marzano DOP, Cento, or Bianco DiNapoli are the gold-standard cans), a pinch of salt, maybe a splash of olive oil. That's it. The oven cooks the sauce while it cooks the pizza. Pre-cooking the sauce before baking gives you a "cooked twice" flavor that tastes flat and slightly burnt, and most pizzeria pros agree on this.
