How Will my Pizza Steel Age?

The more you use your pizza steel the darker and more non-stick it will become.

Out of the Box

Your pizza steel will be a clean gray color when you receive it out of the box. There may be some blemishes, but these are not defects and will not affect the seasoning or the functioning of the steel.

After Use

After a few uses, the steel will quickly start to change color as the seasoning, oils and cheese from your pizzas bake onto the surface. Again, this does not at all affect the cooking. In fact, the more oil and use that makes its way onto the steel the more non stick it will be.

Caring for Your Steel

How Do I Clean Off Stuck Cheese?

Your pizza steel is very forgiving when it comes to getting food unstuck. You can use the scraper side of a grill brush or a metal spatula to scrape the cheese and debris off. We bought a paint scraper for the job - cheaper and works just as well.

How Do I Clean the Steel?

Cleaning is not a difficult thing with pizza steels as it is as simple as hot water and a scrubbing brush and/or scraper as suggested above. Do not use soap though as soap can remove the layers of seasoning that get built up and then you are back to square one and there is a chance that you would have to re-season the steel.

Once clean, dry it immediately with a paper towel or lint free cloth. If you are not going to be using it for a while and the steel will be in storage, we recommend giving it a light oiling with whatever you have on hand - flaxseed, vegetable or canola oil are a few of many that you can use.

FAQ

Why Does a Pizza Steel Beat a Baking Stone?

Our pizza steel is made from 0.25 inch thick carbon (A36) steel. This is better than traditional pizza stones in many ways, but here are the main reasons:

  • A pizza steel heats very evenly and holds its heat for a very long time which allows you to cook multiple pizzas back to back.
  • Cooking on a steel is very versatile, which allows you to cook in your kitchen oven, gas or charcoal/wood grill, as well as on a campfire.
  • The steel can be used as a cold plate too. Leave it in the freezer overnight and bring it out to keep your favorite treats icy cold.
  • A pizza steel will not shatter into a million pieces if you drop it. However, one downside is that it can slice your toes off if you drop it on them so be careful when handling.

This does not apply to all steels - as many are imported now - but many stones are brought in from outside of the USA whereas our pizza steel is made in the USA from American steel.

How Do I Become a Chef and Bake my First Pizza?

With a steel such as ours, the process is easy:

1. Place your pizza steel on the second-highest rack position, as you want it as close to the top heating element as possible while leaving yourself enough space to work. Go through the motions of placing the pizza on the steel before turning up the heat.

2. Turn up the heat to the maximum (500 - 550°F on most ovens) on the broil setting or convection bake if your oven
has it. The steel needs to be really hot to perfectly cook the crust of your pizza. The hotter the better!

3. Let the pizza steel preheat for 45 - 60 minutes, ensuring it has reached its maximum temperature. It may smoke a little while heating, so ensure good ventilation.

4. Dust the pizza steel with a little cornmeal and slide the prepared pizza onto the hot baking steel with a dusted pizza peel, large spatula, or rimless baking tray. The cornmeal prevents the pizza from sticking and tearing.

5. Bake your pizza for 4 - 9 minutes but take care to watch it closely after 3 minutes, as the steel transfers heat very quickly. You will soon get a feel for how long it takes.

6. Once baked, remove the pizza from the steel using a pizza peel or large spatula. Take care as the steel, toppings and pizza base will be piping hot. Have a suitable tray or board ready on which to place your cooked pizza.

7. Make any additional pizzas before turning off the oven. Let your baking steel cool down for at least an hour before attempting to move it. Use extreme caution! This steel will remain piping hot for a very long time!

I Have Cooked my Crispy Crust Pizzas. Now What?

We recommend leaving the steel in the oven to cool for a good few hours. The thickness of the steel and the superior heat retentive properties of carbon steel makes the steel remain blazing hot for a long time - this is the reason why you can so easily cook multiple pizzas back to back.

While the steel is cooling, you can use this period to chill with your family, friends or cat.

Once the steel is cool enough, go ahead and remove it and carry on with the cleaning.

Tips & Tricks

Maybe you have not found it yet, but we know that deep down, you have that you have a little chef waiting to burst out and create the most delicious things ou could ever imagine. We went ahead and put down some tips to give you a head start with using your pizza steel.

1. Be VERY careful. You are dealing with high temperatures and could get burned. Long gloves are recommended. Use common sense.

2. Use an infrared thermometer to ensure that the steel is up to its maximum temperature (500 - 550°F) especially when baking multiple pizzas.

3. Leave the oven door slightly ajar to ensure that the broiler element stays on while cooking.

4. Don't quench the steel in water to try to cool it quicker. This could warp it.

5. It is best practice to oil after every wash. Due to the pizza steel being made from carbon steel, it is susceptible to rust if not cared for properly, just like cast-iron cookware.
