- Unbox the Lightweight and wipe the surface with a dry cloth. The pre-seasoning is already polymerized in our facility using organic flaxseed oil, so a quick wipe is the only prep.
- Place it on the middle rack of your oven before preheating. Center it so heat circulates evenly around all four edges.
- Preheat at 500 to 550°F for 25 to 30 minutes. This is roughly half the preheat time of a 1/4 inch steel and a third of the time for a 1/2 inch slab.
- If your oven has a broiler, switch to broil for the last 2 to 3 minutes before the pizza goes in. This helps the top cook as fast as the bottom.
- Slide your pizza on with a wooden or metal peel dusted with semolina or flour. Aim for the back third of the steel, not the center.
- Bake for 5 to 7 minutes for a thin crust, 7 to 9 minutes for Neapolitan style at higher hydration. Watch the cornicione, not the clock.
- Pull the pizza off with the peel and let the steel recover for 4 to 5 minutes before the next bake.
- When you're done, let the steel cool inside the oven, then lift it out one-handed using the cutout finger holes. Wipe with a dry cloth. No soap, no scrubbing.

We built a lightweight pizza steel because most heavy steels become permanent residents in their owners' ovens. We've all done it at some point. You buy a 15 pound carbon steel pizza steel, you fight it in for the first few months, and eventually it just stays put.
The rack space gets sacrificed because the alternative is wrestling a hot slab in and out of a 500°F oven on a Tuesday night.
We've spent 10-plus years baking pizza in our own wood-fired oven and testing baking surfaces across 8-plus brands and thicknesses. After hundreds of pizzas and more 500°F lift-outs than we can count, the pattern was obvious. Heavy steel works, but the people using it eventually stop using it the way they meant to.
There is also a safety angle nobody talks about. Standard home oven racks are rated to roughly 25 pounds. A 3/8 inch full-size steel weighs about 22 pounds, which is right at the ceiling.
The Lightweight at 7 pounds sits under 30% of that limit. That matters for apartment ovens with sliding rails and for anyone who's ever felt a rack flex under a hot steel.

What changes at 0.12 inches
At 0.12 inches and 7 pounds, the Lightweight changes three things about how a pizza steel actually behaves in a home oven. Faster preheat. Easier handling. Same crust chemistry.
The compromise is honest and small. You give up some thermal recovery between bakes, which only matters if you are baking five pies in a row. For everything else, an ultra thin baking steel is the better tool.
Faster preheat at the same temperature
A pizza steel only works once it is fully saturated with heat. Thicker means slower. At 1/4 inch, a steel needs 45 to 60 minutes to fully charge at 500°F.
At 1/2 inch, you are looking at 90 minutes or more. The Lightweight hits temperature in 25 to 30 minutes because there is half as much steel for the heating elements to push energy into.

This is also where the broiler question matters. Pizza Heaven's Andreas, a respected voice in the home pizza community, has noted that for ovens without a strong broiler, a 1/8 to 1/4 inch steel actually performs better than a thicker one.
The reason is balance: the bottom-up heat from a thinner steel matches the top-down heat the oven can produce. The Lightweight at 0.12 inches sits inside that recommended zone.

The simple rule we use in our own kitchen: halve the thickness, halve the preheat. That gets you from a 45-minute wait to roughly 25, which is the difference between Tuesday night pizza happening and Tuesday night pizza becoming Wednesday night pizza.
Same carbon steel, different mass
The Lightweight is made from the same ASTM-A36 carbon structural steel as our Classic. A36 is the standard structural plate used in everything from bridge gussets to industrial fabrication.
For pizza, what matters is its thermal conductivity. The thermal properties of A36 plate come in around 50 watts per meter-Kelvin, roughly 18 times higher than a typical pizza stone. That is why steel beats stone for home pizza when you want a crisp bottom in a home oven.
Less mass means less stored heat between bakes. That part is real and we are not going to dress it up.
But for one or two pizzas, the bottom of the dough still hits the steel hot enough to trigger Maillard browning at 280 to 330°F within seconds. The crust chemistry does not change at 0.12 inches. Only the recovery time between bakes does.
Pre-seasoned the moment it arrives
A pre-seasoned pizza steel is the exception, not the rule. Most carbon steel pizza steels on the market ship raw. You unbox a slab from a brand like Brooklyn Bridge or Cooking Steels and your first 90 minutes with it are sanding, oiling, and baking the seasoning on yourself.
That is sometimes two or three rounds before it is even usable. We did not want to ship a product that asked our customers to do that work.

If you are baking five pies in a row, the Classic recovers faster between pizzas because it stores more heat. That is the physics of more thermal mass and we are not going to argue with it.
For one or two pizzas, that extra recovery does not show up in the crust. A single 12 inch pie pulls a tiny fraction of the heat the steel is holding regardless of thickness.
There is a vocal corner of the pizza internet that dismisses anything thinner than 1/4 inch as basically a cookie sheet. We have heard it for years. The math says otherwise. For the cook making one or two pies per session, which is most home cooks, a pre-seasoned baking steel at 0.12 inches lands the bake.

Where the Lightweight is the right call:
